Eleven-portion chilli

Wow, that took a whole hour of peeling and chopping vegetables. Cooking the mushroom and aubergine down in a separate pan, then doing the same for the root veg, helps fit so much in the end into the big pot. I wonder if I even have eleven plastic tubs for freezing it?

I do occasionally wonder if I ought to be doing this - but then I remember that our freezer is essentially full already - so even if I had enough tubs (I don't) they wouldn't fit. Drat :)

We freeze this sort of thing in plastic bags: a minute in the microwave to soften the edges, then you can roll the sides of the bag down, tip the lump into a bowl and finish cooking it.

We find bags go kinda shapeless in the freezer and then are inconvenient to fit in a pan, so we bought a large number of Tupperwares of various sizes.

I usually arrange the bags neatly in a row inside a bigger container, so that they freeze into little bricks, and then take them out of the container when they're solid.

We tried that recently but they froze less neatly than yours in the bigger container in that it was really hard to prise a single bag out.

I'm impressed - my biggest vessel only yields 8-9 portions.

I really need to do a big batch - now that I'm going to the gym after work again, I really do need things to put straight into the microwave when I get hom.

Hungry people might want bigger portions, but these are good one-heaped-ladle size to bulk out with veg and rice on the side. I feel so much better when I have proper nosh available when I'm too tired to cook, instead of the quick fix of salty, fatty (tasty!) microwave rice.

We did a Rabbit bolognaise from a Jamie Oliver recipe a bit ago - yielding around 16 portions! Quite strong tasting so you don't need that much. Nice.

Clearly it's the weekend for it because I made a massive chilli on Friday night. I have no idea how many portions it was.... 7 different containers - each one at least two portions....

It is a very very big pot. :-)
