You could try ewe's cheese as well, I think the Cambridge Cheese Company sell a couple of types, though the one I remember liking was a blue cheese which many peope seem to have a strong aversion to.
Roquefort is sheeps' milk IIRC, if you want blue cheese. Too strong for me though! You can get sheep's milk Wensleydale in Tescos, too, and the phrase 'blue Wensleydale' also rings a bell.
As for the goats, personally I find I can tolerate small amounts of goats' dairy reasonably often, but eg. having it every day or using the milk in quantity, say on my cereal, isn't good for me. Sheep's milk cheeses seem to give me less trouble, though the yogurt at least is horribly sour-tasting. I've never tried the milk.
It depends whether it's all milk I can't tolerate, or whether it's cow-specific. I'd hoped butter would be okay as it's mostly fat, there's not a lot of cow left in it. I'd expect cheese to be the worst thing for me. But I could be wrong!

Well, if the goats' cheese does turn out to be OK, you could try the shortbread experiment again with goats' butter - quite a few supermarkets sell it now.
Seconded, I use goats' butter for baking when my stomach's not having a "WAH take the dairy away I don't care what it is!" week. There's even goats' cream :)
